How to Make Low Fat Caribbean Sweet Potato and Bean Stew
One of the challenges of trying to lose weight is finding foods that are healthy, low fat and still taste good. Caribbean Sweet Potato and Bean Stew is delicious, filling and can be made as a vegetarian or meat dish.
Things You'll Need
- 2 medium sweet potatoes
- 2 cups green beans
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (14 ½ oz.) vegetable both
- 1 small onion
- 2 teaspoons Caribbean or Jamaican jerk seasoning
- ½ teaspoon dried thyme
- ¼ teaspoon salt
- ¼ teaspoon ground cinnamon
- 2 chicken breasts
Instructions

Prepare the vegetables. Peel and cut the sweet potatoes into 1 inch pieces. Cut the green beans into bite size pieces. Slice the onion.

Prepare the meat if you are making the meat version. Wash the chicken breasts and cut them into bite size chunks.

Combine everything in the slow cooker. Add the vegetables first, then the meat, then the spices. Cover and cook in low for 5 to 6 hours. Test to make sure the meat is done and the vegetables are tender.

The recipe makes 4 generous servings. When done, spoon into a bowl and enjoy. If you are on Weight Watchers the recipe is 3 points per serving for meatless and 6 points per serving with chicken.
