How to Make Healthy Low Carb Stir Fry

Making a healthy but delicious low carb stir fry is not difficult. A low carb stir fry can taste great and can be varied enough to help make any low carb diet easier. In addition, if done properly, this stir fry will be just as filling as a high carb meal and won't leave you hungry for more later.

Things You'll Need

  • Chicken or turkey
  • Green beans
  • Bell peppers
  • Carrots
  • Celery
  • Mushrooms
  • Cabbage, spinach or both
  • Green onions
  • Onions (optional)
  • Broccoli
  • Asparagus
  • Frying Pan
  • Soy sauce or other sauce for stir fry
  • Can of black or pinto beans

Instructions

  1. Dump the rice. Rice is loaded with carbs. Warm up some black beans or pinto beans to use those in place of the rice. Not only does this add extra protein to your diet, but the beans also will fill you up.

  2. Avoid high carb vegetables such as potatoes and beets, and limit your use of corn, carrots and peas. Many low carb vegetables work better; try broccoli, bell peppers, spinach, cabbage, mushrooms, celery, green onions, cauliflower or green beans.

  3. Cut or dice the vegetables and mushrooms. Dash in some soy sauce or, for a more Mediterranean flair, use olive oil.

  4. Make the stir fry meat heavy using turkey and chicken. Fish stir fry doesn't work quite as good, but it can be a good mix with another white meat.

  5. Cook like a regular stir fry to taste, and use a bed of beans instead of rice for the base.
