Ingredients:
- 1 cup pearl barley
- 2 large potatoes, peeled and diced

- 1 teaspoon dried marjoram

Instructions:
1. Prepare the pearl barley: Rinse the pearl barley under cold water and drain it.
2. Cook the vegetables: In a large pot, heat the butter over medium heat. Add the chopped onions and cook until they become translucent. Add the diced carrots and potatoes, and cook until the vegetables are slightly softened.
3. Add the pearl barley and water: Stir in the drained pearl barley and add 4 cups of water. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for about 30 minutes, or until the pearl barley is tender.
4. Add the greens: Add sliced savoy cabbage and kale to the pot and stir well. If needed, add more water so the vegetables are covered by liquid. Continue simmering for 15 minutes or until the cabbage and kale are tender.
5. Season the soup: Season the soup with salt and black pepper to taste. Add dried marjoram and dried thyme for added flavor.
6. Serve: Allow the soup to cool for a few minutes before serving. Knockie is traditionally served hot with crusty bread or bannock (Scottish flatbread).
