How do you make whitebait fritters?
### Ingredients
* 1 cup all-purpose flour
* 1 teaspoon baking powder
* 1/2 teaspoon salt
* 1/4 teaspoon freshly ground black pepper
* 1/4 cup finely chopped onion
* 1/4 cup finely chopped red bell pepper
* 1/4 cup chopped fresh parsley leaves
* 1 egg
* 1 cup milk
* 1/2 pound whitebait, cleaned and patted dry
* Vegetable oil, for frying
Instructions
1. In a large bowl, whisk together the flour, baking powder, salt, and pepper.
2. Add the onion, red bell pepper, and parsley and mix well.
3. In a separate bowl, whisk together the egg and milk. Add to the dry ingredients and mix until just combined. Do not overmix.
4. Add the whitebait to the batter and toss to coat.
5. Heat a large skillet over medium-low heat. Add enough oil to come up the sides of the pan.
6. Once the oil is hot, drop the batter by tablespoons into the pan. Cook for 2-3 minutes per side, or until golden brown and cooked through.
7. Drain on paper towels and serve immediately.
Tips
* For best results, use fresh whitebait. If you can't find fresh whitebait, you can also use frozen whitebait, but be sure to thaw them completely before using.
* Don't overmix the batter. Overmixing will result in tough fritters.
* Fry the fritters over medium-low heat. This will help them to cook evenly without burning.
* Serve the fritters immediately with your favorite dipping sauce. Some good options include tartar sauce, cocktail sauce, or ranch dressing.
