How do you make figgy pudding?
Ingredients:
* 1 cup dried figs, chopped
* 1/2 cup all-purpose flour
* 1/2 teaspoon baking soda
* 1/4 teaspoon salt
* 1/2 teaspoon ground cinnamon
* 1/4 teaspoon ground nutmeg
* 1/4 teaspoon ground cloves
* 1/2 cup packed brown sugar
* 1/4 cup unsalted butter, softened
* 1/4 cup molasses
* 1 egg
* 1/2 cup boiling water
Instructions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Grease a 9-inch square baking dish.
3. In a large bowl, combine the figs, flour, baking soda, salt, cinnamon, nutmeg, and cloves.
4. In a medium bowl, cream the brown sugar and butter together until light and fluffy. Beat in the molasses and egg. Add the boiling water and stir to combine.
5. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
6. Pour the batter into the prepared baking dish and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
7. Let cool for at least 30 minutes before serving.
Tips:
* For a richer pudding, use dark brown sugar instead of light brown sugar.
* You can also add 1/2 cup of chopped nuts or dried cranberries to the batter.
* Figgy pudding is best served warm with custard sauce or ice cream.
