Paleo Oatmeal Cookies: Almond Flour & Banana Power
This recipe uses almond flour and mashed banana for a naturally sweet and chewy cookie that's Paleo-friendly.
Ingredients:
* 1 cup almond flour
* 1/2 cup coconut flour
* 1/4 cup unsweetened shredded coconut
* 1/2 teaspoon baking soda
* 1/4 teaspoon salt
* 1/4 cup coconut oil, melted
* 1/4 cup honey or maple syrup
* 2 ripe bananas, mashed
* 1 teaspoon vanilla extract
* 1/4 cup chopped walnuts or pecans (optional)
Instructions:
1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a large bowl, whisk together almond flour, coconut flour, shredded coconut, baking soda, and salt.
3. In a separate bowl, whisk together melted coconut oil, honey (or maple syrup), mashed bananas, and vanilla extract.
4. Pour the wet ingredients into the dry ingredients and mix until just combined.
5. Stir in chopped nuts if using.
6. Drop by rounded tablespoons onto the prepared baking sheet, leaving space between each cookie.
7. Bake for 12-15 minutes, or until edges are golden brown.
8. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Tips:
* For a chewier cookie, use extra ripe bananas.
* Feel free to experiment with different flavors. Try adding cinnamon, nutmeg, or chocolate chips.
* Store cookies in an airtight container at room temperature for up to 3 days.
