Paleo Oatmeal Cookies: Almond Flour & Banana Power

This recipe uses almond flour and mashed banana for a naturally sweet and chewy cookie that's Paleo-friendly.

Ingredients:

* 1 cup almond flour

* 1/2 cup coconut flour

* 1/4 cup unsweetened shredded coconut

* 1/2 teaspoon baking soda

* 1/4 teaspoon salt

* 1/4 cup coconut oil, melted

* 1/4 cup honey or maple syrup

* 2 ripe bananas, mashed

* 1 teaspoon vanilla extract

* 1/4 cup chopped walnuts or pecans (optional)

Instructions:

1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
