Strawberry Cream Cheese Icing:

* 8 ounces (225g) cream cheese, softened
* 1/2 cup (1 stick) unsalted butter, softened
* 1/4 cup (50g) granulated sugar
* 1/4 cup (50g) powdered sugar

* 1/2 cup (120ml) strawberry purée (fresh or frozen)
* Pinch of salt
Instructions:
1. Prepare the strawberry purée: If using fresh strawberries, wash and hull them. Blend them until smooth. If using frozen strawberries, defrost them slightly and then blend.
2. Beat the cream cheese and butter: In a large bowl, beat the softened cream cheese and butter together until smooth and fluffy. You can use an electric mixer or a handheld whisk.
3. Add the sugar: Gradually add the granulated sugar and powdered sugar, beating until combined.
4. Add the vanilla and salt: Stir in the vanilla extract and a pinch of salt.
5. Add the strawberry purée: Slowly add the strawberry purée while mixing until the icing is light pink and smooth.
6. Chill and use: Refrigerate the icing for 30 minutes to allow it to thicken slightly. It will be easier to spread on your baked goods when it is slightly chilled.
