Oatcakes Recipe:
Ingredients:
- 2 cups traditional oats
- 2 cups whole wheat flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon sugar (optional)
- 2 tablespoons melted butter
- 1 cup buttermilk

2. In a large mixing bowl, combine the oats, flour, salt, baking soda, and sugar (if using).
3. Stir in the melted butter and mix well until the mixture resembles coarse breadcrumbs.
4. Add the buttermilk and stir until the dough comes together and starts to form a ball.
5. Turn the dough out onto a lightly floured surface and knead briefly, just until it is smooth and cohesive.
6. Divide the dough into 8-10 equal pieces.
7. Roll each piece of dough out into a thin circle, about 6-7 inches in diameter.
8. Place the oatcakes on a greased baking sheet.
9. Bake in the preheated oven for 10-12 minutes, or until the oatcakes are golden brown and cooked through.
10. Let the oatcakes cool on a wire rack.
To Serve:
Oatcakes can be served warm or cold. They can be eaten on their own, with butter or jam, or used to make sandwiches and wraps.
Enjoy your homemade oatcakes!
