Ingredients:

Crust:

* 1 cup rolled oats

* ½ cup crushed almond butter

* 2 Tbsp maple syrup

* ½ cup Greek yogurt

* 2 eggs

* ½ tsp vanilla extract

* 1 cup unsweetened almond milk

* 1 can pumpkin puree

* ½ cup brown sugar

* 2 tsp pumpkin spice

* 1 tsp cinnamon

* 1 tsp ground ginger

* Pinch of salt

Instructions:

1. Preheat the oven to 350° F / 175° C.

2. In a food processor, combine the rolled oats, almond butter, maple syrup, and salt. Process until a crumble forms. Add water and process again until mixture sticks together.

3. Press mixture into the bottom and up the sides of a 9 inch springform pan.

4. In a mixing bowl, blend the cream cheese, Greek yogurt, eggs, and vanilla extract together until smooth. Add the remaining filling ingredients and mix together.

5. Pour the cheesecake filling over the crust, and smooth the top. Bake for 35-45 minutes or until the center is set.
