Sauerkraut Sausage Bake with Libby's and Kielbasa

This recipe combines the classic flavors of sauerkraut and kielbasa with the convenience of Libby's canned sauerkraut.

Yields: 6-8 servings

Prep time: 15 minutes

Cook time: 30 minutes

Ingredients:

* 1 (16 ounce) can Libby's Sauerkraut, drained

* 1 pound kielbasa sausage, sliced or diced

* 1 medium onion, chopped

* 1/2 cup chicken broth

* 1/4 cup brown sugar

* 1 tablespoon Dijon mustard

* 1/2 teaspoon caraway seeds

* 1/4 teaspoon black pepper

* 1/2 cup shredded cheddar cheese (optional)

Instructions:

1. Preheat oven to 350°F (175°C).

2. In a large skillet, cook the kielbasa over medium heat until browned. Drain off any excess fat.

3. Add the chopped onion to the skillet and cook until softened, about 5 minutes.

4. Stir in the drained sauerkraut, chicken broth, brown sugar, Dijon mustard, caraway seeds, and black pepper.

5. Pour the sauerkraut mixture into a greased 9x13 inch baking dish.

6. Sprinkle with shredded cheddar cheese, if desired.

7. Bake uncovered for 30 minutes, or until the cheese is melted and bubbly.

Tips:

* For a spicier flavor, use hot kielbasa or add a dash of cayenne pepper to the mixture.

* You can also add other vegetables like potatoes, apples, or carrots to the bake.

* If you prefer a more tangy flavor, use a good quality caraway-flavored sauerkraut.

Serving suggestions:

* Serve the sauerkraut sausage bake with crusty bread or mashed potatoes.

* A side salad or coleslaw also complements the dish.

Enjoy!
