How to Make the Best 7-Up Pound Cake (8 Steps)
A touch of citrus flavor can boost the taste of any cake, but especially the taste of buttery pound cake. Using 7-UP or another lemon-lime flavored soda gives the cake a lightness so that it is not too rich or overbearing. For pure lemon flavor, use freshly grated lemon zest instead of lemon extract. You can use all butter or a combination of butter and shortening for the batter. The cake batter will fill one 10-inch Bundt or tube pan or two 8-inch round pans.
Things You'll Need
- 1 to 1 1/2 cups unsalted butter, softened
- 1/2 cup shortening (optional)
- Mixing bowl
- Stand mixer or hand mixer
- 3 cups granulated sugar
- 5 eggs
- 1 tbsp. lemon zest
- 1 tsp. vanilla extract
- 3 cups (15 oz) all-purpose flour
- Wooden spoon
- 6 oz. (3/4 cup) lemon-lime soda (7-Up)
- 2 8-inch round pans or 1 10-inch tube pan
- Cooking spray or butter
Instructions

Place the butter or butter and shortening in the mixing bowl and add the sugar. Beat until fluffy and creamy, which will take about 10 minutes.

Add the eggs one by one. Mix to combine after you add each egg. Add the lemon zest and vanilla and beat to combine.

Pour in the flour, 1 cup at a time. Beat slowly to incorporate.

Pour in the 7-Up or other lemon lime soda. Stir the batter with a spoon to work the soda into the rest of the batter.

Turn the oven on to 350 degrees F. Coat the cake pan or pans with cooking spray or butter.

Pour the batter into the pans.

Place the pans in the oven. If you are using two pans, put them next to each other on the same rack so that they cook evenly. Bake for 35 minutes, or until golden and a knife stuck in the middle of the cake comes out clean.

Cool cake completely before removing from the pans.
