How to make an Italian Cream Cake (Italian Creme Cake Recipe)

Things You'll Need

  • For the cake:
  • 1 stick of butter
  • 2 cups sugar
  • 2 cups all-purpose flour
  • 1 cup buttermilk
  • 1 (3 1/2 ounce) can of flaked coconut
  • 5 egg whites
  • 1/2 cup of vegetable shortening
  • 5 egg yolks
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1/2 cups of chopped nuts (walnuts or pecans)
  • For the icing:
  • 8-ounce package of cream cheese, softened
  • 1 pound box of powdered sugar
  • 1/2 cup of nuts
  • 1/2 stick of butter

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Cream butter and shortening together.

  2. Add sugar and beat until mixture is smooth

  3. Add egg yolks and beat well.

  4. Sift flour, measure and sift again with baking soda

  5. Add the flour alternately with the buttermilk to the creamed mixture.

  6. Stir in vanilla, then coconut and chopped nuts.

  7. Fold in egg whites.

  8. Pour batter into three 8-inch round cake pounds

  9. Bake at 350 degrees for 25 minutes or until done. Allow to cool.

  10. Make the frosting while the cake cools.

    Beat cream cheese with butter.

  11. Add vanilla, beating until smooth

  12. Gradually add the powdered sugar

  13. Whip on high, then fold in nuts.

  14. Spread between layers, on the sides and on the top of the cake.
