Pizelle
_(Italian waffles)_
Ingredients
* 1 cup sugar
* 1 cup flour
* 1 tablespoon baking powder
* 1/4 teaspoon salt
* 5 large eggs, separated
* 2 tablespoons melted butter, plus more for greasing pan
* 1/2 teaspoon orange zest
* 1/2 teaspoon vanilla extract
Instructions
1. In a medium bowl, whisk together sugar, flour, baking powder, and salt.
2. In a large bowl, beat egg whites until stiff peaks form. Gradually beat in sugar and continue to beat until meringue is thick and glossy.
3. In another bowl, beat egg yolks until light and fluffy. Add melted butter, orange zest, and vanilla and mix until well blended.
4. Gradually whisk dry ingredients into egg yolk mixture, alternating with egg whites, until just combined (do not over mix).
5. Heat a pizzelle iron according to manufacturer's instructions. Grease with melted butter. Pour about 2 tablespoons of batter onto hot iron for each pizzelle.
6. Cook according to manufacturer's instructions, then remove from iron and let cool on a wire rack.
