11. After 2 days, remove the wheel from the mold and place it on a wire rack.

12. Sprinkle the wheel with salt.

13. Let the wheel sit for 3 weeks, or until it has developed a bloomy rind.

Brie is ready to eat once it has developed a bloomy rind. It can be stored in the refrigerator for up to 2 months.
