Brie is a soft, creamy cheese that is typically made from cow's milk. It has a bloomy rind, which is a white mold that forms on the outside of the cheese. Brie is a popular cheese to eat on its own, or it can be used in a variety of dishes.
To make brie, you will need the following ingredients:
- 1 gallon of cow's milk
- 1/4 teaspoon of mesophilic starter culture
- 1/8 teaspoon of rennet
- 1 tablespoon of salt
Instructions:
1. Heat the milk to 86 degrees Fahrenheit.
2. Add the mesophilic starter culture and stir well.
3. Let the milk sit for 30 minutes.
4. Add the rennet and stir well.
5. Let the milk sit for 1 hour, or until it has thickened into a gel.
6. Cut the gel into 1-inch cubes.
7. Let the cubes sit for 10 minutes.
8. Drain the whey from the cubes.
9. Put the cubes into a mold and press them into a wheel.
10. Turn the wheel over every 12 hours for 2 days.
11. After 2 days, remove the wheel from the mold and place it on a wire rack.
12. Sprinkle the wheel with salt.
13. Let the wheel sit for 3 weeks, or until it has developed a bloomy rind.
Brie is ready to eat once it has developed a bloomy rind. It can be stored in the refrigerator for up to 2 months.
