How to Thicken Pudding Without Flour or Cornstarch
One of the simplest and quickest desserts that you can make is pudding. A basic pudding recipe includes a thickener along with the other ingredients like eggs, milk and flavorings. Common thickeners for puddings include cornstarch and flour. However, flour can add an off-taste to pudding, and you may not have cornstarch in your pantry. In those cases, there are a number of substitutions that you can use instead of cornstarch or flour, such as tapioca.
Things You'll Need
- Tapioca pearls
- Food processor or coffee grinder
- Egg
- Milk
- Sugar
- Flavoring
- Salt
Instructions

Place the tapioca pearls into a food processor or coffee grinder. Grind the tapioca until it is a fine powder.

Make the pudding following your recipe as directed, substituting the powdered tapioca in equal amounts for the cornstarch as the recipe calls for it. If substituting for flour, use 1 tablespoon for every 1 1/2 tablespoon of flour. Mix the tapioca powder with the milk to create a slurry prior to adding to the pudding recipe. Use 1 tablespoon tapioca for every 1 tablespoon of milk to create the slurry.

Continue making the pudding as directed. Store the unused tapioca powder in a sealed container.
