Eggs Florentine is a dish consisting of poached eggs, spinach, and hollandaise sauce, served on an English muffin. It is similar to eggs benedict, but instead of ham or Canadian bacon, spinach is used.
Ingredients:
* English muffins
* Butter
* Eggs
* White vinegar
* Salt and pepper
* Fresh spinach
* Hollandaise sauce
* Grated Parmesan cheese (optional)
Instructions:
1. Prepare the English muffins: Split the muffins in half and toast them until they are golden brown.
2. Poach the eggs: Bring a pot of water to a simmer over medium heat. Add the vinegar and salt to the water. Crack each egg into a small bowl. Gently slide the eggs into the simmering water. Cook the eggs for 3-4 minutes, or until the whites are set and the yolks are still runny.
3. Cook the spinach: While the eggs are poaching, heat some butter in a skillet over medium heat. Add the spinach and cook until it is wilted. Season with salt and pepper.
4. Assemble the eggs Florentine: Place a toasted English muffin half on a plate. Top the muffin with some of the spinach, then an egg, and finally some hollandaise sauce. Repeat with the remaining muffins, eggs, and hollandaise sauce.
5. Serve immediately: Sprinkle with grated Parmesan cheese if desired. Serve the eggs Florentine immediately.
