What is the best way to separate eggs?

Here is the simplest and quick way to separate the eggs:

1. Crack the egg over a bowl: Hold the egg in one hand and tap the narrow end of the egg on a hard, flat surface, like the edge of a bowl.

2. Make sure to keep your aim is precise and your grip is steady, so that the shell doesn't break into too many pieces.

Break the shell in half.

3. Gently pull: Take the two parts of the shell in each hand and pull them apart, keeping them over the bowl.

4. Keep the two shell halves close to each other so that the egg white doesn't drop too far and break the yolk.

5. Let the white drain: While holding one shell half that has most of the white in it, let the white drain out of the other half into the bowl.

6. Transfer to a second bowl: Now transfer the yolk from one shell half to the other, being very careful not to break it. Do this one or more times until all of the white is drained off and the yolk is left by itself in one of the shell halves.

7. Use a spoon if needed: If it is difficult to get all of the white off of the yolk with the shell halves, you can lift out the yolk with a spoon and gently lower it into the bowl of white.
