How to Make Bhatura (8 Steps)

Bhatura, also called bhatoora, is a soft fried Indian bread made with yogurt, flour, oil and yeast. When fried, it puffs up into a fluffy, chewy, lightly-browned bread that is frequently served with chickpea curry, or chole, making the Indian dish chole bhature. The bread is considered classic Punjabi cuisine, originating in the Punjab region of Northern India and Western Pakistan. While Indian food is often very complex, bhatura is easy to make at home and requires only a few ingredients.

Things You'll Need

  • 2 cups all-purpose flour 1/2 tsp. baking soda 1 tbsp. sugar 3/4 cup yogurt Vegetable oil for frying Salt to taste

Instructions

  1. Sift the flour and add the baking soda and salt.

  2. Combine the yogurt and sugar in a separate bowl, and add it to the flour mixture.

  3. Add enough warm water to allow you to knead the mixture, forming a soft dough.

  4. Cover the dough with a damp cloth and allow it to ferment for three to four hours in a warm place.

  5. Divide the dough into 10 to 12 portions and roll them into balls. Cover and set the balls aside for five minutes.

  6. Flatten each ball between your palms. Roll or press the dough into rounds about 5 or 6 inches in diameter.

  7. Heat the oil in a deep frying pan or large wok until very hot.

  8. Fry the bhaturas one at a time, turning so that they brown evenly. When they are lightly browned on each side, remove from the pan and place on paper towels to drain.
