What was the first vegetable to be canned commercially?
The first vegetable to be canned commercially was peaches, in 1820 by Ezra Daggett in New York. While the invention of canning is attributed to Nicolas Appert in 1810, it took another decade for the process to be commercialized and applied to vegetables.
