How to Thicken Pumpkin Soup (5 Steps)

Pumpkin soup should be thick and silky, but striking the perfect balance between too runny and too thick can be difficult. If you add too much liquid, your pumpkin soup will be thin, but there are several remedies for this problem at hand in your pantry and most will not affect the flavor of the soup.

Things You'll Need

  • 1 taablespoon flour or cornstarch
  • 1 tablespoon water
  • Whisk
  • Bread crumbs or pureed pumpkin or pureed cooked rice or mashed potato flakes

Instructions

  1. Whisk together the flour or cornstarch and water to create a thickening slurry. Increase the amount of flour or cornstarch and water according to the volume of your soup recipe. Use flour to thicken 1 1/2 cups of soup and the cornstarch to thicken 3 cups of soup.

  2. Bring the soup to a simmer over medium heat.

  3. Stir the flour or cornstarch mixture into the soup and continue to cook until thickened.

  4. Add a tablespoonful per serving of uncooked bread crumbs, pureed pumpkin, pureed cooked rice or mashed potato flakes to the pumpkin soup. The starches in these will help to thicken the soup.

  5. Remove the lid from the soup pot and increase the heat to medium high to bring the soup to a boil. Stir the soup as it boils to prevent burning. Boiling the soup without the lid will evaporate some of the excess liquid.
