Gelatin mainly consists of the amino acids glycine, proline, and hydroxyproline. It also contains small amounts of other amino acids, including alanine, arginine, aspartic acid, glutamic acid, leucine, lysine, methionine, phenylalanine, serine, threonine, and valine.
