How do you make a cheese flan?
Ingredients:
- 225g digestive biscuits
- 75g butter
- 1 can of condensed milk (evaporated milk will also work)
- 1 can of evaporated milk (if using condensed, skip this)
- 2 medium eggs
- 250g cream cheese
- 2 tbsp caster sugar
- 1 tbsp vanilla extract
Method:
- Crush the biscuits into fine crumbs. You can do this by putting them in a food processor, or by placing them in a plastic bag and crushing them with a rolling pin.
- Melt the butter in a microwave, then mix it with the biscuit crumbs to form a paste. Press this mixture into the base of a 9-inch springform pan. Place in the fridge to chill.
- In a large mixing bowl, beat the cream cheese until smooth and creamy. Then add the sugar and vanilla extract and mix until well combined.
- Beat in the eggs, one at a time.
- Finally, add the condensed and evaporated milk (or just condensed if using evaporated) and whisk until well combined.
- Pour the mixture into the prepared springform pan and bake for 30 minutes, or until the flan is set and golden brown on top.
- Remove the flan from the oven and let it cool completely before chilling in the fridge for at least 4 hours, or overnight.
