Cheddaring refers specifically to a step in the production of cheddar cheese and cheese with cheddar characteristics. During cheddaring, the separated curds from pasteurized milk are cut into blocks, stacked by hand, turned, and then piled again (for 2–3 h), a process called milling. Milling reduces moisture content while encouraging protein bonding, imparting desirable texture, elasticity, and structure during molding and pressing steps to make final blocks.[6]
