What is Cooper cheese?

Cooper cheese or Coopers' is an English, hard, crumbly cheese made with pasteurised cows' milk. It was originally from the Isle of Wight, an English island in the English Channel, where it was made from milk from the local White cattle, which once freely grazed the coastal marshlands. These cattle later moved to the mainland but the Cooper cheese name remained. It has a creamy colour and a strong taste. It is often served as a dessert cheese.
