Traditional Greek sausage (Loukaniko)
Ingredients:
Pork shoulder
Pork back fat
Red wine
Garlic
Salt
Freshly ground black pepper
Dried oregano
Sweet paprika
Cumin
Fennel seeds
Instructions:
1. In a large bowl, combine the pork shoulder, pork back fat, red wine, garlic, salt, black pepper, oregano, paprika, cumin, and fennel seeds. Mix well to combine.
2. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, or overnight.
3. Remove the bowl from the refrigerator and let it sit at room temperature for 30 minutes.
4. Preheat the oven to 375 degrees F (190 degrees C).
5. Line a baking sheet with parchment paper.
6. Form the sausage mixture into 1-inch (2.5 cm) thick ropes.
7. Place the sausages on the prepared baking sheet.
8. Bake the sausages for 20-25 minutes, or until they are cooked through and browned.
9. Let the sausages cool slightly before serving.
