What is the orgin of dirty rice?

The origins of this dish are credited to the Acadian people who are believed to have created it in the late 1700s. In the 18th century, exiled French Acadians relocated to the Cajun Prairies of southern Louisiana. During that time, they needed to extend what little they had; that included meat scraps and inexpensive ingredients like rice. The name "dirty rice" is thought to come from the color and texture of the rice which could be described as "dirty" after being cooked in the meat drippings.
