Why does lunch meat look like it has a rainbow on sometimes?

The iridescent colors that sometimes appear on lunch meat are caused by diffraction, interference, and refraction of light with the meat fiber’s connective tissue. Depending on the angle the light reflects at and the thickness of the tissue layers, different wavelengths get reinforced or suppressed. This phenomenon is similar to that observed in soap bubbles and oil on water.
