What causes a bitter taste?
A bitter taste is often caused by compounds containing nitrogen, and organic compounds such as alkaloids and tannins. These substances bind to receptors on the tongue and send a signal to the brain that the food is bitter. Some common bitter foods include coffee, tea, chocolate, hops, dark leafy greens, and citrus fruits. Bitter taste can also be caused by certain medications and by some medical conditions, such as diabetes.
