What does sushi stand for?

"Sushi" doesn't actually stand for anything. It's a Japanese word that means "sour-tasting food" or "vinegared rice".

The term originally referred to the vinegared rice itself, not the entire dish. It was only later that the word came to encompass the various preparations we know as sushi today, which often include seafood, vegetables, and other ingredients.
