Cooking Mini Meatloaves in Biscuit Dough

For a fun and versatile take on traditional meat loaf, try creating mini loaves using biscuit dough as the base. These savory treats are not only quick and easy, but you can customize each one to suit individual tastes. The biscuit dough helps seal in moisture, creating flavorful pre-proportioned servings perfect for meals or party hors d'oeuvres.

Things You'll Need

  • Muffin pan
  • Biscuits, homemade or from a can
  • Spoon
  • Prepared meat loaf mixture
  • Seasonings
  • Ketchup or other sauce topping
  • Cheese (optional)

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit.

  2. Grease a regular-sized muffin pan with butter or cooking spray.

  3. Place one cut-out of biscuit dough in the bottom of each muffin pan cup. If using store-bought biscuits with ten to a can, this will leave two of the twelve cups in the muffin pan unfilled. For best results and more even cooking, leave the middle two slots empty.

  4. Place the muffin pan in the oven and bake for 2 minutes until the dough is slightly brown around the edges. Remove the pan from the oven.

  5. Spoon meatloaf mixture on top of each biscuit in the muffin pan, filling about 3/4 full. For less mess, use an ice scream scoop to add the meat. Basic meatloaf mixtures that work well with this technique include ground beef, pork or poultry combined with egg, spices, breadcrumbs or oats and liquid such as milk, sour cream or ketchup.

  6. Make an indentation in the middle of each meatloaf with a spoon or your thumb. Fill the indentations with your choice of add-ins. Possible ideas include spaghetti sauce, salsa, barbecue sauce, ketchup, cheese cubes or chopped roasted red peppers.

  7. Spread ketchup or any other desired sauce on the tops of each mini meatloaf.

  8. Bake for 30 minutes or until the meat is cooked through and the edges of the biscuits are golden brown.

  9. Top with cheese, if desired, and return to the oven for about 5 minutes or until the cheese is bubbly and melted.

  10. Remove the pan from the oven and let the meat loaves rest for 10 minutes. Remove the meatloaves from the muffin cups and serve.
