Ingredients:

* 1 pound (450g) tenderloin steak, cut into 1-inch thick medallions

* 2 tablespoons olive oil

* 1 tablespoon butter

* 1/2 cup shallots, finely chopped

* 1/2 cup mushrooms, sliced

* 1/4 cup cognac

* 1/2 cup heavy cream

* 1 tablespoon Dijon mustard

* Salt and pepper to taste

* Parsley, for garnish

* Pommes frites (French fries), for serving

* Green beans, for serving

Instructions:

1. Season the steak medallions with salt and pepper on both sides.

2. Heat the olive oil and butter in a large skillet over medium-high heat.

3. Once the butter is melted and sizzling, add the steak medallions and cook for 2-3 minutes per side, or until browned.

4. Remove the steak medallions from the skillet and set aside.

5. Add the shallots and mushrooms to the skillet and cook for 3-4 minutes, or until softened.

6. Add the cognac and cook for 1 minute, or until the cognac has reduced by half.
