What is a good recipe for leg of lamb?

Ingredients:

- 1 leg of lamb, bone-in (about 5 pounds)

- 1 tablespoon olive oil

- 1 teaspoon salt

- 1/2 teaspoon black pepper

- 1/4 cup red wine vinegar

- 1/4 cup water

- 1/4 cup chopped fresh rosemary

- 1/4 cup chopped fresh thyme

- 2 tablespoons Dijon mustard

- 2 tablespoons honey

Instructions:

1. Preheat the oven to 350 degrees F (175 degrees C).

2. In a large bowl, combine the olive oil, salt, and pepper. Rub the mixture all over the leg of lamb.

3. Place the lamb in a roasting pan and add the red wine vinegar, water, rosemary, thyme, Dijon mustard, and honey.

4. Roast the lamb in the preheated oven for about 2 hours, or until the meat is cooked through and a meat thermometer inserted into the thickest part reads 145 degrees F (63 degrees C).

5. Remove the lamb from the oven and let it rest for 15 minutes before carving and serving.
