What Meat Goes Well With Boiled Cabbage?

Boiled cabbage is a traditional side dish found in Eastern European, Irish and Southern American foodways. It has a reputation as a sulphurous, smelly sort of dish but if you keep the cabbage at a low simmer rather than a vigorous boil, it's not so bad. After boiling, the tough and fibrous cabbage leaves are rendered into a silky and tender dish. Boiled cabbage is a bit on the bland side in taste, so match it with a strongly flavored meat dish.

Corned Beef

  • Corned beef and cabbage are a classic pairing, with the salty meat complementing the tender, mild cabbage. The corned beef and cabbage are cooked together in this case, producing a one-pot feast that deserves a spot on the table more than once a year to celebrate St. Patrick's Day.

Ham

  • Cabbage takes particularly well to smoked flavors as well as to rich, fatty meats.
