How to Cook Sausage in a Tomato Sauce Gravy (4 Steps)

Often dubbed "gravy" by Italian-American cooks, tomato sauce serves as a flavorful base for slowly simmering sausages. As the sausages cook in the tomato sauce, the flavors marry and become more than the sum of their parts. You can use this method of cooking sausages to top pasta or polenta or make hearty sausage subs soaked in the savory gravy. Use any tomato sauce you like, your favorite store-bought version or an old family recipe. Sweet, mild or spicy Italian sausages complement this dish.

Instructions

  1. Pour the tomato sauce into a pot and bring to a simmer. Keep warm.

  2. Prick the sausages in several places with a fork or toothpick or slice them in half lengthwise, depending on your preference.

  3. Heat a few tablespoons of oil in a large, heavy-bottomed pot over medium-high heat. Brown the sausages on all sides.

  4. Transfer the tomato sauce to the pot with the sausages. Reduce heat to low and simmer until the sausages are cooked through, about 20 to 30 minutes.
