Ingredients:

- 1 rack of beef ribs (about 3 pounds)

- 1 tablespoon olive oil

- 1 tablespoon brown sugar

- 1 tablespoon garlic powder

- 1 tablespoon onion powder

- 1 tablespoon paprika

- 1 tablespoon salt

- 1 teaspoon black pepper

- 1/2 cup barbecue sauce

Instructions:

Preparation:

1. Preheat your charcoal grill. Aim for a temperature between 225°F and 250°F (107°C to 121°C).

2. Remove the membrane from the ribs. This will help the ribs cook more evenly and absorb the flavors better. To remove the membrane, slide a knife between the ribs and the membrane, then gently pry it off.

3. Season the ribs. Combine the olive oil, brown sugar, garlic powder, onion powder, paprika, salt, and black pepper in a small bowl. Rub the mixture all over the ribs, paying extra attention to the bone side.

Cooking:

1. Place the ribs on the grill. Arrange the ribs on the grate with the bone side down.

2. Cook the ribs low and slow. Cover the grill and cook the ribs for 2 hours, replenishing the charcoal if necessary.

3. Flip the ribs. After 2 hours, flip the ribs over so that the meat side is facing down.

4. Brush the ribs with barbecue sauce. Brush the ribs with half of the barbecue sauce and continue cooking for 30 minutes.

5. Baste the ribs and flip again. Baste the ribs with the remaining barbecue sauce and flip them over one last time so that the bone side is facing down.

6. Finish cooking. Continue cooking the ribs for 30 minutes or until the meat is tender and falls off the bone.
