How to Boil Potatoes for Grilling (4 Steps)
Boiling the potatoes first will ensure that, when grilled, your potatoes will be golden brown and crispy on the outside, but tender and fluffy on the inside. Boiling the potatoes first is a time saver as well, because you can grill the potatoes in the five to 10 minutes it will take to grill a steak or a hamburger. You can boil and grill any potato, but fairly small, firm textured red or Yukon gold potatoes will hold their shape well during the boiling and grilling process.

Select potatoes that are firm with no green spots, shriveled skin, soft areas or blemishes. The potatoes should be similar in size so the potatoes will cook evenly.

Slice the potatoes into even slices about 1/4 inch thick. Put the potato slices in a large saucepan and then cover the potato slices with about an inch of cold water.

Bring the water to a simmer, leaving the saucepan uncovered. Poke a fork into the center of a potato slice after about five minutes. The potato should be fairly firm, and the fork should enter easily with only slight resistance. The potato should not stick to the fork, which indicates that the potato is overcooked.

Pour the boiled potatoes into a colander to drain and then grill the potatoes as desired.
