How to Cut a Chicken in Half for Grilling (6 Steps)
Cutting a chicken in half for grilling is not done for only aesthetic reasons. Grilling half a chicken takes less time than a whole bird; serving grilled chicken halves is easier since half of a small chicken provides a single serving. To grill your chicken halves, you will need to perform a bit of surgery on a whole chicken to remove its backbone.
Things You'll Need
- Poultry shears or sharp knife
Instructions

Remove the neck and giblets from the cavity of the chicken.

Lay the chicken with the breast side down and the legs toward you on a cutting board.

Cut along both sides of the backbone with poultry shears or a sharp knife. Discard the backbone.

Press the two halves of the chicken open to expose the inside of the ribs.

Cut through the breastbone with poultry shears to separate the two halves of the chicken.

Season and grill the chicken halves as desired.
