How to Marinate Albacore Tuna for Grilling (5 Steps)

Albacore tuna is tender and flavorful when cooked on the grill. A marinade further brings out the flavor and adds more moisture to the tuna so it's even more tender. Tuna absorbs marinades readily, so even thick tuna steaks don't require a long marinating time. Grilling cooks the tuna quickly, sealing in moisture and flavor. Experiment with a basic marinade by adding teriyaki sauce or replacing the lemon juice with orange juice.

Things You'll Need

  • 1 cup Lemon juice
  • 1/2 cup Olive oil
  • Salt and pepper to taste
  • 1 tbsp. Ginger, freshly grated
  • Resealable storage bag
  • 4 Albacore tuna steaks

Instructions

  1. Combine 1 cup lemon juice with 1/2 cup olive oil in a gallon-sized, resealable bag. Add 1 tbsp. fresh ginger and the salt and pepper to taste. Reserve 1/2 cup of the mixture in a separate bowl in the refrigerator.

  2. Place the tuna steaks in the plastic bag and seal it. Refrigerate it immediately.

  3. Marinate the tuna steaks in the refrigerator for 30 minutes. Turn the bag over midway through the marinating time so both sides of the tuna soak equally in the marinade.

  4. Heat an electric grill to medium. Warm a charcoal grill until you have a red coals but few flames.

  5. Remove the albacore tuna from the marinade and grill on one side for about three minutes. Brush the top of the steak with the reserved marinade and turn the meat. Cook for an additional three minutes, basting the top of the tuna steak a second time with the marinade.
