Honey Garlic Glazed Salmon with Roasted Vegetables
This recipe is easy to make, packed with flavor, and perfect for a weeknight dinner.

Ingredients:
* 2 (6-8 ounce) salmon fillets, skin on or off
* 1 tablespoon olive oil
* 1 tablespoon honey
* 1 tablespoon soy sauce
* 1 teaspoon Dijon mustard
* 1/2 teaspoon garlic powder
* 1/4 teaspoon black pepper
* 1 cup broccoli florets
* 1 cup Brussels sprouts, halved
* 1/2 cup cherry tomatoes, halved
Instructions:
1. Preheat oven to 400°F (200°C).
2. Prepare the vegetables: Toss the broccoli, Brussels sprouts, and cherry tomatoes with 1 tablespoon olive oil, salt, and pepper in a large bowl. Spread the vegetables in a single layer on a baking sheet.
3. Prepare the glaze: In a small bowl, whisk together the honey, soy sauce, Dijon mustard, garlic powder, and black pepper.
4. Glaze the salmon: Brush the salmon fillets with the glaze and place them on a separate baking sheet.
5. Roast: Bake the salmon and vegetables for 15-20 minutes, or until the salmon is cooked through and the vegetables are tender.
6. Serve: Serve the salmon with roasted vegetables.
Tips:
* For a crispier crust: Broil the salmon for the last 2-3 minutes of cooking time.
* Add some spice: Stir in a pinch of red pepper flakes to the glaze.
* Get creative: Use other vegetables like carrots, asparagus, or zucchini.
