Where is a recipe for short smoked salmon?
Ingredients:
* 1 side of salmon (about 1-2 pounds)
* 1/2 cup brown sugar
* 1/4 cup kosher salt
* 1 tablespoon ground black pepper
* 1 tablespoon smoked paprika
* 1/2 teaspoon garlic powder
* 1/2 teaspoon onion powder
* 1/4 cup apple cider vinegar
* 1/4 cup water
* 1 handful of wood chips (such as hickory or apple)
Instructions:
1. Rinse the salmon under cold water and pat dry with paper towels.
2. In a large bowl, combine the brown sugar, salt, pepper, smoked paprika, garlic powder, and onion powder.
3. Rub the mixture all over the salmon, ensuring that it is evenly coated.
4. Place the salmon on a baking sheet lined with parchment paper and refrigerate for at least 2 hours, or overnight.
5. Preheat the smoker to 225 degrees Fahrenheit (107 degrees Celsius).
6. Soak the wood chips in water for at least 30 minutes.
7. Drain the wood chips and add them to the smoker box.
8. Place the baking sheet with the salmon in the smoker and close the lid.
9. Smoke the salmon for 2 hours, or until it is cooked through.
10. Remove the salmon from the smoker and let it cool slightly.
11. Serve the salmon immediately or store it in the refrigerator for later.
