Difference between a filet of salmon and darne salmon?
Fillet of salmon:
* Cut from the side of the salmon, parallel to the spine.
* Thicker than a darne.
* Can be cooked in various ways, such as grilling, baking, and poaching.
Darne salmon:
* Cut from the belly of the salmon, perpendicular to the spine.
* Thinner than a fillet.
* Usually grilled or pan-fried.
