Ingredients:

* 1 whole palometa fish, cleaned and gutted

* 1 tablespoon of olive oil

* 1 lemon, zest and juice

* 1 teaspoon of salt

* ½ teaspoon of black pepper

* 1 teaspoon of minced garlic

* 1 teaspoon of minced ginger

* 1 cup of chopped fresh herbs (such as parsley, cilantro, or basil)

* Optional: additional vegetables such as sliced onions, bell peppers, tomatoes, or baby potatoes

Instructions:

1. Preheat your oven to 400°F (200°C).

2. Rinse the palometa fish under cold water and pat dry with paper towels.

3. In a small bowl, combine the olive oil, lemon zest and juice, salt, pepper, garlic, and ginger. Mix well to make a marinade.

4. Rub the marinade all over the inside and outside of the fish.

5. Place the fish in a baking dish and add the optional vegetables around it.

6. Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and flaky.

7. Garnish with chopped herbs and serve immediately.

Notes:

* The cooking time may vary depending on the size of the fish, so keep an eye on it to avoid overcooking.

* Feel free to adjust the amount of seasonings and herbs according to your preference.

* You can also broil the fish instead of baking it for a crispier skin.

* Palometa can also be grilled, pan-fried, or steamed.
