How to Make Beef and Broccoli (5 Steps)

Beef and broccoli is one of those dishes that lends itself to modification. If you prefer bolder flavors, add more ginger and garlic. Diners watching their salt intake benefit from using low-sodium soy sauce. The dish can be made in 20 minutes -- about the length of time it takes to prepare the rice that it’s traditionally served over.

  • Beef round or sirloin, sliced into strips
  • Ginger, peeled and chopped
  • Garlic, peeled and chopped
  • Soy sauce
  • Dry red wine
  • Canola oil
  • Broccoli, stems removed and florets separated
  • Orange juice
  • Cornstarch

Instructions

  1. Make a marinade for the beef by combining 2 parts chopped garlic and 1 part chopped ginger. Add even parts of soy sauce and dry red wine. Mix and pour the marinade over the beef; marinate for at least 10 minutes.

  2. Pour about a tablespoon of oil into a heavy pan that can withstand high heat or a wok. Heat to medium-high; add the beef with its marinade and cook, stirring frequently, for 3 or 4 minutes, or until the beef is browned.

  3. Remove the beef from the pan, and add the broccoli to the pan with about 1/4 cup of water. Cook and stir the broccoli for 3 or 4 minutes until it’s no longer raw, but it retains a bright color and a slight crunch.

  4. Make the sauce by combining cornstarch and cold orange juice while the broccoli cooks. The cornstarch is a thickening agent, so the more you use, the thicker the sauce. Whisk until smooth and pour over the broccoli.

  5. Return the meat to the pan, stir and warm for a few moments to reheat the meat. Serve over rice.
