What is a beef enchilada recipe?

Ingredients:

- 1 pound ground beef

- 1/2 cup chopped onion

- 1/2 cup chopped green bell pepper

- 1 (15 ounce) can black beans, rinsed and drained

- 1 (15 ounce) can corn, drained

- 1 (10 ounce) can diced tomatoes with green chilies, undrained

- 1 (4 ounce) can diced green chilies

- 1 tablespoon chili powder

- 1 teaspoon ground cumin

- 1/2 teaspoon salt

- 1/4 teaspoon black pepper

- 10 corn tortillas

- 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)

- Sour cream, for serving

- Salsa, for serving

- Guacamole, for serving

Instructions:

1. Preheat the oven to 375 degrees F (190 degrees C).

2. In a large skillet, brown the ground beef over medium heat. Drain any excess fat.

3. Add the onion and green bell pepper to the skillet and cook until softened, about 5 minutes.

4. Stir in the black beans, corn, tomatoes with green chilies, green chilies, chili powder, cumin, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the sauce has thickened.

5. Spread a thin layer of sauce in the bottom of a 9x13 inch baking dish.

6. To assemble the enchiladas, place a tortilla on a plate. Add some of the beef filling, cheese, and sauce. Roll up the tortilla and place it seam-side down in the baking dish. Repeat with the remaining tortillas.

7. Pour any remaining sauce over the enchiladas and sprinkle with the remaining cheese.

8. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.

9. Serve immediately with sour cream, salsa, and guacamole.
