How Do I Slow Roast a Boston Butt in My Oven With a Rub?

Boston butt pork roast, removed simmering hot from the oven while steaming and falling apart tender, is a rich and savory treat. Preparation requires a total of approximately 30 to 45 minutes followed by the pork oven-roasting for three to four hours. It is not difficult and does not require much cooking experience to prepare the seasoning rub or oven-roast the Boston butt. The roast is cooked in only one foil-lined pan so cleanup is minimal. Boston butt pork roast is made into a one-dish meal by wrapping a variety of vegetables into the aluminum foil with the pork during the last three hours of roasting time.

Instructions

  1. Mix together ¼ cup each of paprika, coarse salt and brown sugar, 1/8 cup each of dry ground mustard and fresh cracked black pepper as well as 1 tbsp. each of garlic and onion powder and cayenne pepper. This seasoning rub seasons an 8 lb. Boston butt pork roast.

  2. Set the Boston butt roast fat-side down in a roasting pan lined with aluminum foil that is lightly sprinkled with olive oil.

  3. Massage a generous amount of seasoning rub into all sides and surfaces of the roast.

  4. Place the uncovered roast into a preheated 350 degree Fahrenheit oven for one hour. The roast browns nicely and the seasoning sets into the pork.

  5. Remove the Boston butt pork roast from the oven and reduce the heat to 300 degrees Fahrenheit.

  6. Cover the roaster pan tightly with heavy-duty aluminum foil and immediately slide it back into the oven for three to four hours or until it reaches an internal temperature of at least 160 degrees Fahrenheit. Use a stem meat thermometer by pushing it through the foil into the middle of the Boston butt after three hours. Continue cooking until the correct temperature is reached.
