Ingredients

* 20 pounds boneless, skinless chicken breasts or thighs, cut into 1-inch pieces

Instructions

1. Preheat the oven to 375 degrees F (190 degrees C).

2. In a large bowl, combine the chicken, olive oil, salt, and pepper. Toss to coat.

3. In a large skillet, heat the oil over medium heat. Add the chicken and cook until browned on all sides.

4. Add the onion, celery, and carrots to the skillet and cook until softened.

5. Stir in the tomatoes, black beans, corn, tomatoes with green chilies, chili powder, cumin, and cayenne pepper. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the chicken is cooked through.

6. Transfer the mixture to a 9x13-inch baking dish.

7. Bake in the preheated oven for 20 minutes, or until heated through.
