a recipe for easy Chicken Catchatori?
## Ingredients:
For the Chicken:
- 1 pound boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
For the Sauce:
- 1 can (28 ounces) crushed tomatoes
- 1/2 cup red wine
- 1/4 cup chicken broth
- 1 tablespoon Italian seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup grated Parmesan cheese
- Chopped fresh parsley, for garnish
Instructions:
1. Preheat the oven to 400 degrees F (200 degrees C).
2. In a large skillet, heat the olive oil over medium heat. Add the chicken and cook until browned on all sides, about 5 minutes.
3. Reduce the heat to low and add the crushed tomatoes, red wine, chicken broth, Italian seasoning, garlic powder, onion powder, and red pepper flakes (if using). Bring to a simmer and cook for 10 minutes, stirring occasionally.
4. Remove the skillet from the heat and stir in the Parmesan cheese.
5. Pour the chicken mixture into a greased 9x13-inch baking dish. Bake for 15 minutes, or until the chicken is cooked through.
6. Garnish with chopped parsley and serve.
_Tips:_
- If you don't have 1 pound of chicken, you can easily adjust the recipe by using more or less chicken. Just be sure to adjust the amount of sauce accordingly.
-If you don't want to use red wine, you can substitute it with white wine or even grape juice.
-To make the dish gluten-free, use gluten-free chicken broth and Italian seasoning.
