Ingredients:
- 1 pound boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 1 tablespoon cornstarch
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons vegetable oil
- 1/4 cup chopped onion
- 1/4 cup chopped green bell pepper
- 1/4 cup chopped red bell pepper
- 2 tablespoons minced garlic
- 2 tablespoons minced ginger
- 1/4 cup soy sauce
- 1/4 cup chicken broth
- 2 tablespoons rice vinegar
- 2 tablespoons brown sugar
- 1 teaspoon red pepper flakes
- 1/4 cup chopped peanuts
- 2 green onions, thinly sliced
Instructions:
1.) In a large bowl, combine the chicken, cornstarch, salt, and pepper. Toss to coat.
2.) Heat the oil in a large skillet or wok over medium-high heat.
3.) Add the chicken and cook, stirring occasionally, until browned on all sides.
4.) Add the onion, green bell pepper, and red bell pepper. Cook, stirring occasionally, until the vegetables are softened.
5.) Add the garlic and ginger. Cook, stirring constantly, for 1 minute.
6.) Add the soy sauce, chicken broth, rice vinegar, brown sugar, and red pepper flakes. Bring to a boil.
7.) Reduce heat to medium-low and simmer for 15 minutes, or until the chicken is cooked through and the sauce has thickened.
8.) Stir in the peanuts and green onions.
9.) Serve over rice.
