Here is a recipe for lamb shanks:

Ingredients:

For the lamb shanks:

- 4 lamb shanks

- 1/2 cup (1 stick) unsalted butter, divided

- 2 tablespoons all-purpose flour

- 1/2 teaspoon salt

- 1/4 teaspoon freshly ground black pepper

For the sauce:

- 2 cups (1 pint) chicken broth

- 1 cup red wine

- 2 tablespoons tomato paste

- 2 cloves garlic, minced

- 1 teaspoon dried oregano

- 1/2 teaspoon dried thyme

- 1 bay leaf

For serving (optional):

- Mashed potatoes

- Green beans

- Crusty bread

Instructions:

1. Preheat the oven to 375°F (190°C).

2. In a large skillet over medium heat, brown the lamb shanks in the butter. Season with salt and pepper. Transfer the lamb shanks to a 3-quart baking dish.

3. Add the remaining butter to the skillet. Add the flour and cook for 1 minute, stirring constantly. Slowly whisk in the chicken broth and red wine. Bring the mixture to a boil, stirring constantly. Reduce heat and simmer for 5 minutes, or until the sauce has thickened slightly.

4. Add the tomato paste, garlic, oregano, thyme, and bay leaf to the sauce. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.

5. Pour the sauce over the lamb shanks in the baking dish. Cover the baking dish with aluminum foil and bake for 1 1/2 hours, or until the lamb shanks are fork-tender.

6. Serve the lamb shanks with mashed potatoes, green beans, and crusty bread, if desired.
