Spicy Vegan Potato Curry (Serves 4)

Ingredients:

* 2 tbsp olive oil

* 1 large onion, chopped

* 2 cloves garlic, minced

* 1 inch ginger, grated

* 1 tsp ground cumin

* 1 tsp ground coriander

* 1/2 tsp turmeric powder

* 1/2 tsp chili powder (or more to taste)

* 1/4 tsp garam masala

* 1/2 cup tomato puree

* 1 can (400g) diced tomatoes

* 1 kg potatoes, peeled and cubed

* 1 cup vegetable broth

* 1/2 cup chopped fresh cilantro

* Salt and pepper to taste

Instructions:

1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.

2. Add garlic, ginger, and spices (cumin, coriander, turmeric, chili powder, and garam masala). Cook for 1 minute, stirring constantly.

3. Stir in tomato puree and diced tomatoes. Bring to a simmer and cook for 5 minutes, stirring occasionally.

4. Add potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
